    This creamy Italian sausage gnocchi soup is easy to throw together and will make a satisfying warming meal this soup season. Itโ€™s delicious and creamy, uses simple pantry ingredients and is ready in about 30 minutes with no cream in sight!

    We love gnocchi, they're the perfect carb-filled pillows of joy to be enjoyed in so many different ways! Fried, boiled, thrown in soup, baked - you name it. This sausage gnocchi soup is a flavorful warming soup to whip up in the cooler months. Itโ€™s almost a cross between a stew and a soup.

    We love all kinds of soup at this time of year, especially a smooth creamy soup like this roasted butternut squash and red pepper soup.     ๐Ÿ What is gnocchi?

    Gnocchi are called various things in different regions of the world, but we personally associate them with Italian food. They're made of potatoes, flour and eggs, to create a dough that is then rolled out and cut into smaller pieces before being shaped against a fork or gnocchi paddle.

    These lovely dumplings can be especially light and delicate if homemade. Often they are served simply with melted butter, sage or other herbs and a variety of sauces. We particularly like a tomato, basil and pancetta sauce with ours!

    The best part about gnocchi is that they are so quick to cook and you know they are ready when they float to the surface of the cooking water.

    You can quite easily get different gnocchi varieties nowadays that you can pan fry - these are a bit firmer but are fantastic to throw together a quick meal. In this recipe we will be simmering ours in the soup not long before serving.

    Here are some reasons you'll love this Italian sausage gnocchi soup:

    One pan - anything that involves less washing up is a winner in our house. A real one pan wonder, this gnocchi soup will brighten up even the toughest days.

    Lightened up - coming in at under 500 calories, this soup is a lightened up version using a quick cashew cream to make it super creamy. If you like this try our vegetable orzo soup.

    Quick - you won't be standing over the stove for hours with this soup, you can be sitting and enjoying it in under 40 minutes.

    Warming - cosy and warming, this soup will hit all the right spots during those colder months. Perfect.

    Seasonal - using seasonal ingredients you can enjoy a wonderful bowl of flavor this soup season.

    ๐Ÿ“‹ Ingredients

    This sausage gnocchi soup has very simple pantry ingredients which are readily available. This is what you'll need:

    Sausage - youโ€™ll need some fresh sausage meat or fresh Italian sausages. Either works well, removing skins takes more effort and a little more time though.

    Spices - we love using spices, youโ€™ll need crushed red pepper flakes and fennel seeds to add a lovely flavor to the sausage whilst itโ€™s browning.  

    Herbs - youโ€™ll need a few herbs to carry on with that Italian flavour theme: dried thyme and rosemary will be just fine, but if you want to use fresh herbs thatโ€™s also good, youโ€™ll just need to use a bit more than directed below. 

    Creaminess - youโ€™ll get all your creaminess without cream! Youโ€™ll just need cashews and water. Thatโ€™s it. 

    Gnocchi - for this recipe weโ€™ve used pre-made gnocchi as who doesnโ€™t love an easy win? Just donโ€™t mix them up with the ones made for frying!

    ๐Ÿ“– Customizations

    We know how you all love customizing recipes so here are some recommendations to mix things up:

    Change up the protein - we would recommend trying this with either ground chicken or turkey to mix it up. If you wanted to go full-on veggie, you could try a ground soya protein.

    Change up the creaminess - you can switch the cashew cream for standard dairy cream if thatโ€™s what you have. You can even miss it out completely, maybe just add a touch more broth, but it's not necessary.

    Tomatoey - you could add some tomato paste to make it a tomatoey soup instead.

    Pulses - If you want to switch some of the veggies out with some canned beans like borlotti or cannellini beans this should also work. We would say that the soup is very filling with the gnocchi though so it may be a bit much. 

    Spices - Chilli and fennel are quintessential components in Italian sausage for us. The fennel gives a lovely anise flavor in this soup. If you donโ€™t have any fennel seeds you could substitute for crushed anise seeds or caraway seeds or just leave them out.

    ๐Ÿ”ช How to make sausage gnocchi soup

    This sausage gnocchi soup is very easy to make, youโ€™ll have all you need in these step by step guides.

    Flavor building steps

    Process steps for browning sausage, sauteing vegetables, adding spices and adding stock.
    1. Over a medium-high heat, sautรฉ and brown off the sausage meat in a large pan or dutch oven with the chilli flakes and fennel seeds; this should take about 5 minutes. Remove the sausage from the pan and set aside. 
    2. Using the sausage fat, fry off the shallots, celery and carrots until softened, about 5-8 minutes. Add a little more oil if needed.
    3. Stir in the minced garlic, thyme and rosemary and cook for another minute. 
    4. Pour in the stock, season with the salt and pepper and bring to a boil. Simmer for 10 minutes.

    Finishing the soup

    Process steps of adding kale, sausage meat and gnocchi back to the soup and the finished creamy soup.
    1. Add back in the browned sausage, kale and gnocchi and stir throughout. Cook for 2-3 minutes until the gnocchi are done.
    2. Pour in the cashew cream and stir until combined. Check for seasoning and adjust if necessary. Serve the creamy sausage gnocchi soup with some crusty bread. 

    ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ Recipe tips

    For a successful quick, easy and satisfying sausage gnocchi soup make sure to follow these top tips: 

    Cashew cream - the first thing you need to do is put the cashews in a bowl of boiling water and leave to soak until later, when you will add ยฝ cup (120ml) of water to the soaked nuts and blend them with a stick blender until smooth.

    No blender - Donโ€™t have a blender? Either omit the cashew cream altogether or buy regular cream (or oat cream to keep it dairy free).

    Spices - to release more flavor from the fennel seeds, bash them in a pestle and mortar to release their aromatic oils, or rub them between your fingers to break them up a little. This makes a huge difference and allows their flavor to permeate the soup.

    Caramelization - the best thing you can do to develop flavor in this soup is to caramelize. This is done in two stages - the sausage and the veggies used in the base of the soup. Caramelized ingredients really do add a level of umami-ness to the soup, which is what we are looking for!

    Can I make this ahead of time?


    Yes, this soup is good for making ahead of time and can be reheated when needed. We would recommend leaving out the gnocchi and putting them in at the point of reheating if you can, as they will absorb the liquid in the soup and go a little soggy.

    Can I freeze it?

    If you have any leftovers, this soup can easily be portioned up into air tight containers and frozen for up to 3 months.

    How to reheat it

    If you have frozen the soup, defrost in the fridge overnight, then place in a pan over a medium heat and heat through for 5-10 minutes until hot all the way through.

    Ingredients 

    For the Cashew Cream

    • ยฝ cup cashews
    • ยฝ cup water, plus more for soaking the cashews

    For the Sausage Gnocchi Soup

    • 1 pound Italian sausage meat, 454g
    • ยฝ teaspoon crushed red pepper flakes
    • ยฝ teaspoon fennel seeds, crushed
    • 1 large or 2 regular shallots, sliced into half moons
    • 2 sticks celery, sliced
    • 2 medium carrots, sliced
    • 3 cloves garlic, minced or pressed
    • ยฝ teaspoon dried thyme
    • ยฝ teaspoon dried rosemary
    • 5 cups low sodium chicken stock, 1.25 litre
    • 8 ribs cavolo nero, sliced (about 2 cups)
    • 1 pound gnocchi, 454g
    • ยฝ teaspoon sea salt, plus extra to taste
    • ยผ teaspoon freshly ground black pepper

    Instructions

    For the Cashew Cream

    • Soak the cashews in boiling water for 10 minutes until softened. Drain then combine with ยฝ cup water and blend until smooth using a stick blender.

    Flavour building steps

    • While the cashews are soaking, place a dutch oven over a medium-high heat, sautรฉ and brown off the sausage meat with the chilli flakes and fennel seeds, breaking it up with a spoon as it cooks. This should take about 5 minutes. Remove the sausage from the pan and set aside.
      1 pound Italian sausage meat, ยฝ teaspoon crushed red pepper flakes, ยฝ teaspoon fennel seeds
    • Using the sausage fat fry off the shallots, celery and carrots until softened, about 5-8 minutes. Add a little more oil if needed.
      1 large or 2 regular shallots, 2 sticks celery, 2 medium carrots
    • Stir in the minced garlic, thyme and rosemary and cook for another minute.
      3 cloves garlic, ยฝ teaspoon dried thyme, ยฝ teaspoon dried rosemary
    • Pour in the stock, season with the salt and pepper and bring to a boil. Simmer for 10 minutes.
      5 cups low sodium chicken stock, ยฝ teaspoon sea salt, ยผ teaspoon freshly ground black pepper

    Finishing the soup

    • Add back in the browned sausage, kale and gnocchi and stir throughout. Cook for 2-3 minutes until the gnocchi are done.
      8 ribs cavolo nero, 1 pound gnocchi
    • Pour in the cashew cream and stir, check for seasoning and adjust if necessary and serve the creamy sausage gnocchi soup with some crusty bread.

    Notes

    • Start by soaking the cashew nuts first then prepare the rest of the soup to save time.
    • If using fresh sausages in casings, 6 sausages will be enough, just squeeze out the meat and discard the casings.ย 
    • Use dairy cream if you don't want to use cashew cream.

      At what point in the recipe is the gnocci cooked? I am guessing it is when you are bringing the base up to heat (after step 4) or is it cooked separately and added at the end?
