You'll need butternut squash, onion, chickpeas, red lentils, ginger, garlic, tomato puree, coconut milk and a variety of warming curry spices.
This curry is packed full of flavour as the butternut squash is first coated in spices and then roasted in the oven!
You'll create an incredible flavour with this homemade quick curry paste full of freshly ground spices...
We want as much flavour as possible in this, so you'll caramelise the onions, ginger and garlic first.
Cooking out the spices from the curry paste will temper them and bring out more flavour into the curry.
