To garnish:
- 2 tablespoons salted honey roasted peanuts roughly chopped
- 2 tablespoons green onions finely sliced
Preheat the oven to 200°C/400°F.
Whisk together the honey sriracha glaze ingredients in a small bowl.
2 tablespoons toasted sesame oil, ¼ cup runny honey, 3 tablespoons sriracha, 2 tablespoon light soy sauce, 2 teaspoons fish sauce
Toss the prepared halved sprouts with the glaze and spread out in a single layer on a large baking sheet lined with parchment paper.

Roast the brussels sprouts for 20-25 minutes until caramelized, tender and sticky all over. No need to flip them. Serve topped with the chopped nuts and green onions if you wish.

- Remove any loose single petals of sprouts from the baking tray otherwise they will just burn up.
- Use parchment paper. This recipe can lead to a rather sticky baked on mess if you don’t.
- Tone down the heat by reducing the sriracha by half if you struggle with spicy.
