Pineapple Chicken Marinade

A vibrant, zingy pineapple chicken marinade to whip up in under 10 minutes. The perfect marinade for chicken, beef, shrimp or fish in grilling season.

Ingredients

  • 1 cup fresh pineapple chunks
  • 2 jalapeños
  • 2 cloves garlic
  • ½ cup fresh coriander/cilantro leaves
  • 4 tablespoons freshly squeezed lime juice
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • teaspoon freshly ground black pepper

Instructions

  • Add all of the ingredients to a high powered blender and blend until smooth. Taste and adjust lime juice, honey and salt to taste.
    1 cup fresh pineapple chunks, 2 jalapeños, 2 cloves garlic, ½ cup fresh coriander/cilantro leaves, 4 tablespoons freshly squeezed lime juice, 2 tablespoons honey or maple syrup, 2 tablespoons olive oil, 1 teaspoon fine sea salt, ⅛ teaspoon freshly ground black pepper
  • Use to marinate chicken and meat, brush on vegetables or drizzle onto grain bowls and salads.

Notes

  • Marinate whole chicken breasts from 1-8 hours, if doing diced chicken or a protein, marinate for a maximum of 30 minutes to an hour. 
  • Pineapple chicken marinade can be stored in a jar in the fridge for up to 5 days before using. Stir or shake well before using.
