Maple Almond Butter Snack Mix

This simple, easy-to-make maple almond butter snack mix is sure to curb any mid-afternoon snack cravings you might have! It's full of all kinds of tasty ingredients but also highly customisable.

  • 2 tablespoons almond butter
  • 2 tablespoons pure maple syrup
  • 1 teaspoon coconut oil, melted
  • 1 teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • ¼ teaspoon flaky sea salt (or if using regular sea salt, just use a pinch)
  • 1 ½ cups mixed nuts (200g, pecans, almonds, cashews, hazelnuts, walnuts, peanuts and brazil nuts all work!)
  • ½ cup coconut flakes (35g)
  • ¼ cup mixed seeds (40g, flaxseeds, sesame seeds, pumpkin seeds, sunflower seeds, etc)

Instructions

  • Preheat oven to 180°C/350°F. Line a baking sheet with greaseproof or parchment paper.
  • In a medium bowl, stir together the almond butter, maple syrup, coconut oil, cinnamon, nutmeg and salt.

  • Add the mixed nuts, coconut flakes and mixed seeds to the wet ingredients. Stir well to combine - it will be sticky. Make sure everything is well coated.

  • Spread the nuts out onto the lined baking sheet, spreading them out as flat as you can, although they will be very clumpy!
  • Bake for about 15 minutes until golden brown, tossing after about 10 minutes in the oven. Leave to cool completely on the baking sheet.
  • Once cool, add to a large bowl and toss with the other ingredients - dried cherries, golden raisins, salted pretzels and dark chocolate chips. Store in an airtight container for 5 days.

Notes

Feel free to vary the types of nuts and seeds you add to this snack mix, just ensure you keep the ingredient ratios as written.
You can use any nut butter you like, but bear in mind it will vary the flavour of the snack mix.
Vary the add-ins according to your preference! Try adding your favourite cereal, crackers, dried fruit or chocolate.
