Preheat oven to 180°C/350°F. Line a baking sheet with greaseproof or parchment paper.
In a medium bowl, stir together the almond butter, maple syrup, coconut oil, cinnamon, nutmeg and salt.
2 tablespoons almond butter, 2 tablespoons pure maple syrup, 1 teaspoon coconut oil, melted, 1 teaspoon ground cinnamon, ⅛ teaspoon ground nutmeg, ¼ teaspoon flaky sea salt
Add the mixed nuts, coconut flakes and mixed seeds to the wet ingredients. Stir well to combine - it will be sticky. Make sure everything is well coated.
1 ½ cups mixed nuts, ½ cup coconut flakes, ¼ cup mixed seeds
Spread the nuts out onto the lined baking sheet, spreading them out as flat as you can, although they will be very clumpy!
Bake for about 15 minutes until golden brown, tossing after about 10 minutes in the oven. Leave to cool completely on the baking sheet.
Once cool, add to a large bowl and toss with the other ingredients - dried cherries, golden raisins, salted pretzels and dark chocolate chips. Store in an airtight container for 5 days.
