Ingredients

  • 130 g frozen peas (1 cup) defrosted
  • 50 g cashew nuts (⅓ cup) soaked for at least 4 hours, or overnight
  • juice of 1 lime
  • 10 g basil leaves (½ cup)
  • 10 g mint leaves (½ cup)
  • 120 ml water (½ cup)
  • 3 tablespoons rapeseed or olive oil
  • ¼ teaspoon salt

Instructions

  • Place all ingredients into a blender (if you don’t have a high powered blender, ensure that you have soaked your cashews for a sufficient length of time). Blend until smooth, adding extra water if needed or desired.
