This fall soup is full of flavour which comes from roasting off the butternut squash and red pepper.

The base of this soup is caramelised onions, garlic and spices. The red lentils add protein and act as a thickener, they also give a nice texture on blending.

Let all the flavours mesh together whilst simmering the soup to finish off cooking the lentils and veggies.

Blend (with care) the soup until creamy and smooth. The red pepper skins disappear, so no need to peel!
